Italian Wedding Soup!

Leigh and I made one of our best dinners yet. It was in-f-in-credible. It was Italian Wedding Soup from the Barefoot Contessa. Here is a recipe.

You basically sautee onions, carrots, and celery for a little while and then add some wine and chicken broth.

MEANWHILE – you are baking the best meatballs of all time. You know they’re the best because they have about a 1/4 cup of Parm and Romano cheese each in them. ALSO the meatballs are cooked in the oven, which SURPRISINGLY is better than fried meatballs. Yes, that’s right. Better than the fried version. The best part about the meatballs is that the cheese you put into them melts and oozes out when warmed in the soup. Two words: Boo ya.

Leigh described it as matzo ball soup for Italians. Enjoy this recipe. And enjoy it good.
